We at Another Broken Egg Cafe, along with our vendor partners, remain committed to providing outstanding products in a responsible fashion. We continuously seek ways to improve for our guests, our franchisees, our employees and for the communities in which we do business. As such we are committed to working with our suppliers towards our goal of a 100% cage-free egg offering by 2026 based on affordability and available supply. While the impact of COVID-19 on the national supply chain limited the availability of cage-free eggs in 2021, at Another Broken Egg Cafe we were able to launch and sustain the usage of cage-free egg yolks in 100% of our locations throughout the country. Cage-free egg yolks are used in every one of our hollandaise and hollandaise-variation recipes which constitute approximately 8-10% of our product mix on an annual basis. In 2021, we were able to launch and sustain the usage of cage-free egg whites in approximately 20% of our system’s locations. Egg whites are used in 50% of our Sensible Creations entrée options including our Monterey Power Omelette and our Skinny Omelette. Egg whites are also available as a substitution option in any of our egg dishes for no additional charge.
